Avoiding grains, and getting tired of bacon and eggs or protein smoothies for breakfast? Here is a super refreshing treat for something different. It’s tart and sweet and creamy and the chia seeds provide a healthy source of omega-3 fatty acids, with a mucilaginous (yes, it’s a word) consistency that helps keep ya regular.
Quick tips
- I find one grapefruit is plenty for two servings.
- When I chop up my grapefruit, I squeeze out and reserve any juice that I can and mix that in with the chia pudding to give it a slightly less thick consistency and add more of that delicious fresh grapefruity flavour.
- Sometimes I’ll sprinkle a little hemp seeds on top for a little bit of a nutty flavour and some extra Omega-3’s.
