I don’t know about you, but the one thing that I continue to miss in my Paleo diet is bread. It’s partly the convenience factor (a sandwich on the go is so easy!), and partly the taste and texture (mmm, warm crusty buttered bread) that I miss.
This recipe… well, I’m not going to say it truly tastes like a grain-baked bread would. BUT, if you’re committed to going Paleo and want something bread-like, this is one of the best recipes I’ve come across. Sometimes I add some cinnamon to make it more like a snack/dessert/breakfast bread. Once in a while I have made a BLT or some french toast with it. But most of the time, I just have it on the side of a nice bowl of soup or a fresh salad, heated up a little in the toaster.
I’ve never done it myself but I think this would also work well baked as muffins. You might just need to adjust your baking time.
